one week to go...

Wow! it's crazy to think that one week ago we signed our contract to actually do this thing and now we are deep in the swing of making it happen and we want to open next Thursday... We have one day left of our food handling class. Then ( if we pass) we get our food handling certificate. We met with our baker Anna yesterday and tasted our shortcake smaples she prepared for us. They are the most amazing tasting shortcake biscuts ever! Today we also went to the bowery and bought a lot of supplies.... The only real problem we have been having so far is getting our shortcake station delivered.... It was supposed to be delivered yesterday and then today and now they "promise" it will be out there tomorrow.... fingers crossed. Don't get me wrong, that's not our only concern, we still have so much work to do. Once our station is out there we have to shift into high gear and build our stand. We have started on paper but, we still have a lot of figuring out to do to make it all work in the limited space that we have..... tomorrow is a big day, we take our test, we get our station delivered, we make sure there isn't anything else we are going to need out there and all the stuff that was there last time e were out there is still there( freezer, storage area, etc) Our friend Stacey who runs redlipstick, the awesome boutique across the street from us, was kind enough to lend/give us her old cash register for our stand. We have been debating wether or not we wnted to get a full cash register because they are a bit expensive and we didn't know if we had the room for it, but getting a free one makes the trial much easier, hope we can make it fit in our little space. thanks Stacy.
